Ingredients
1 head each of Green and Red Cabbage
2-3 Carrots
2 Green Onions
2 tbsp Chopped Fresh Parsley
- Dressing
1 cup Mayonnaise
2 tbsp Apple Cider Vinegar
2 tbsp Dijon Mustard
1-2 tbsp Honey
1 tsp Raw Sugar
1 tsp Celery Seeds
Salt and Pepper to Taste
Directions
- Combine all dressing ingredients and stir with a whisk until well combined. Store in refrigerator so flavors mix. I usually make mine the night before.
- Cut cabbage into quarters. We will only use 1/2 of each cabbage for this recipe. Cut out the core and then cut cabbage into thin strips. Place in a colander over a sink.
- Using a cheese grater, grate the carrots and place in the colander with the cabbage. Sprinkle with about 1 tbsp of salt and stir the cabbage and carrots to make sure the salt gets distributed. Place a heavy pot over the colander to squeeze as much water out of the cabbage as possible.
- After about 30 minutes, place the cabbage and carrots onto a towel and press lightly to remove excess water.
- Put cabbage and carrots into a bowl. Add chopped green onion and parsley. Pour about 2/3rds of the dressing over the cabbage and mix well. If it looks dry or you like more dressing on your cole slaw, add the rest of the dressing and mix.
